Overview


The Hospitality industry is an invaluable employer within the national and international context, therefore you will enhance your opportunity for sustainable employment by undertaking this programme of study. The opportunity to progress academically is also very attractive. The programme delivers a high standard of practical tuition and theoretical learning and teaching in all aspects of professional cookery. Practical activities are facilitated in our training restaurant, which is open to the public and designed to simulate a realistic working environment.

To work as a successful chef within the hospitality industry, it is essential to have a good foundation in a wide range of high quality cooking skills and be able to apply them across a wide range of contexts.

This course delivers professional training in an environment that supports and delivers skills and qualifications that employers find desirable in the current hospitality and professional cookery industry. In addition, in order to round your skills you will have the opportunity to serve within the training restaurant to develop professional service skills, barista skills, bar skills and an understanding of restaurant operations.

There is also an opportunity during the year to work and live abroad as a two week work placement.

Course Information


No formal qualifications required, however work experience in a hospitality or professional cookery-related business would be desirable. Most importantly, the motivation and willingness to learn and embark upon a career within the Hospitality Industry is essential.

 

The Professional Chef 1 Programme has a wide range of practical and theoretical learning and teaching in place to support, develop and enhance your knowledge and skill, which includes some of the following areas:

  • Preparing & Cooking a wide range of soups, fish, meats, rice dishes, pastas, sweets and pastries

  • Bar Service
  • Barista Service
  • Opportunity to work and live abroad.

Part of the programme is delivered in the campus training restaurant, which is designed to replicate a realistic working environment where learners prepare, produce and serve dishes for the public. This may be an evening dinner service.

Upon successful completion of this programme you may progress to the Professional Chef 2 Programme with future options for HNC Professional Cookery/Hospitality/Patisserie (1st year degree), HND Professional Cookery/Hospitality (2nd year degree) & BA Hospitality Business Management (3rd year degree).
